Allium Chinensis

Or Allium chinense depending on the resource you use.  This wonderful onion was on the pickle table in Dali – one of the few good things about Dali.  Looks like a small bunching onion.  Not so small as a scallion, not so big as – say – a cippollini.  It has a cute little bulb that’s part white and part purple streaks up the green tops.  And the flavor!  Oniony, sweet, piquant, juicy, unlike any onion I’ve ever tasted.  How many ways can you say “yummy!”?  On research, it appears to be an import from Japan, where it is used extensively.  I plan to bring it up to my CSA farmer.  Maybe next year, we can grow some.
