The Mystery of Tea

Up in the hills around West Lake is the minority (Dai) Village of Longjin which has a thriving (and apparently exclusive) tea industry. The Longjin Tea Company that we visited specializes in green tea. The green is made from the first tips of growth in the spring. For the Dragon’s Well tea that they grow here, picking is only March, April and May. Everything is hand picked, hand dried and hand packed. The tea is nothing short of amazing in subtle, clean flavors.

Our tea “instructor” May, who studied “tea” at the university, presents us the science of green tea and good health. Antioxidants and cleansers to lower blood pressure, balance blood sugar, cleanse the blood and do all sorts of other good things. And apple a day (or a cup of green tea with orange peel and hawthorne berries) keeps the doctor away.
